Here's some additional info you guys may also find useful.

Instead of using desaturation, you can also render an image monochrome by using the Black & White Adjustment (layer) from Image>Adjustment>Black & White (or create the relevant adjustment layer). This gives you a box with colour sliders that allow you to alter each colour's influence on the final output:

I played about a bit here, duplicating the layer and setting it to Soft Light blending and dropping the opacity. I then added a Black and White adjustment layer with a slight brown tint and then masked out the fern on her wrist, plus I added a Hue/Saturation layer to modify the fern and make the green a little more vivid. Finally I added a Curves adjustment layer to tweak the overall look. Decided after that I wanted to soften the pic a bit, so I made a merged copy of the layers (Shft+Ctrl+Alt+E) and applyed a 2px Gaussian Blur. Then Faded (Shift+Ctrl+F) the blur with the fade set to Soft Light at ~70%.

Additionally you could try a third party colouring plugin such as Colormancer's Tint which will give you more freedom to experiment:

I'm not 100% but I think Colormancer works with Gimp as well.

If you download and install it, you can access it through the Filter menu. I accidentally used it with an adjustment layer selected and my PS crashed so be aware of that though!
